We cup on Thursdays because Thursday is roast day, and you taste what came off the drum that morning next to the same lot four days older. That comparison is the whole session: it is why the roast date is printed on the bag and the best-by date is not. Ninety minutes, twelve seats, and you leave with the bag you liked.
