What this item is
Hot-filling in glass is what makes a jar shelf stable without a preservative, and it is also what fails quietly when the pH is off. Six hours with the meter on the table: acidification, fill temperature, headspace and the seal test. Ten seats, and you take home six jars of your own recipe with the numbers written on the lids.
